In this region, kinkonzuke pickle, an important preserve, is made by fermenting vegetables in homemade miso. The older it gets, the deeper the flavor becomes, whence its name, golden anniversary pickle. To make it, first vegetables are wrapped in konbu, then stuffed into a squash.
