Reimen is originally a dish from the northern part of the Korean peninsula, but Teruto Aoki, a native of Hamhung in North Korea, brought reimen to Morioka for the first time when he opened the Shokudoen restaurant in Morioka in 1954 after migrating to Japan. The Pyongyang cold noodles were already known in Japan, but the Morioka version began when he mixed the spicy flavors of his hometown with the light broth, non-spicy Pyongyang version. From the mid-1960s a large number of new reimen restaurants sprung up around Morioka, each with distinct flavors. The gourmet boom of the mid-1980s propelled Morioka reimen to national fame. The noodles are distinct for the firmness as they are made from wheat flour and potato starch. The soup, flavored with stewed beef and chicken, is chilled to a perfect temperature and combined with the spice of kimchi. There are some 30 noodle eateries dotted around the city.
