Morioka jajamen is a hot noodle dish topped with niku-miso. Add cucumber, green onions and seasonings like garlic, ginger, chili oil and vinegar to taste and stir. It is said to be based on the Chinese jajiamian noodles, arranged in the style of Iwate.
After finishing, it is recommended to break an egg into the bowl with a little niku-miso and leftover broth from the noodles to make an egg drop soup.
